Diabetic Cake - cooking recipe

Ingredients
    2 c. seedless raisins
    2 c. water
    1 c. unsweetened applesauce or 1 1/2 c. chopped apples
    2 eggs
    2 Tbsp. liquid sweetener
    2 c. flour
    3/4 c. cooking oil
    1 tsp. baking soda
    1 1/4 tsp. cinnamon
    1/2 tsp. nutmeg
    1 tsp. vanilla
    1/2 c. chopped nuts, optional
Preparation
    Cook raisins in water until water is gone.
    Add applesauce or chopped apples, eggs, sweetener, and oil.
    Add vanilla and mix well.
    Blend in dry ingredients and nuts.
    Bake in greased and floured pan at 325\u00b0 for 1 hour or until done.
