Salmon Souffle - cooking recipe

Ingredients
    2 Tbsp. melted butter
    2 Tbsp. flour
    1 c. milk
    2 well beaten egg yolks
    1/2 tsp. salt
    1/4 tsp. nutmeg
    dash of pepper
    1 (1 lb.) canned salmon, flaked
    2 stiffly beaten egg whites
Preparation
    Mix butter, flour and milk over low heat on stove (makes a white sauce).
    Slowly add small amount of white sauce to egg yolks and stir into remaining sauce.
    Add salt, nutmeg, pepper and salmon.
    Fold in egg whites.
    Bake in a greased casserole dish at 325\u00b0 for 45 minutes.
