Pineapple-Carrot Mold - cooking recipe

Ingredients
    1 (No. 2) can crushed pineapple
    1 pkg. lemon Jell-O
    1/2 c. sugar
    1/4 tsp. salt
    2 Tbsp. lemon juice
    1 c. grated carrots
    1/2 pt. whipping cream
Preparation
    Drain pineapple and add enough water to syrup to make 1 1/2 cups.
    Heat; add to Jell-O.
    Stir in sugar, salt and lemon juice. Chill until slightly thickened.
    Fold in pineapple and grated carrot.
    Whip cream and fold into Jell-O mixture.
    Pour into 8-inch ring mold.
    Best to make a day ahead to be sure it is thoroughly set.
