Ruby Rhubarb Salad - cooking recipe

Ingredients
    2 c. diced fresh rhubarb
    1/2 c. sugar
    1/4 c. water
    1 (6 oz.) pkg. strawberry Jell-O
    1 Tbsp. lemon juice
    2 (3 oz.) pkg. cream cheese, chilled and diced
    1 banana, sliced
Preparation
    In
    saucepan,
    combine\trhubarb,
    sugar and water. Cook over medium
    heat
    for 3 minutes until tender.
    Cool;
    drain, reserving syrup.
    Add
    enough water to syrup to equal 2 cups. Return
    and bring
    to a boil. Stir in Jell-O until dissolved. Add
    1
    3/4
    cup cold
    water
    and
    lemon juice. When set, add rhubarb,
    cream cheese and banana. Turn into 6 cup mold or 9 x 13-inch pan.
