Refrigerator Potato Rolls - cooking recipe

Ingredients
    1 pkg. yeast
    1 1/2 c. water
    1 c. mashed potatoes (I use instant)
    2/3 c. sugar
    2/3 c. margarine
    2 eggs
    1 1/2 tsp. salt
    6 to 7 c. flour
Preparation
    Dissolve yeast in water in a large bowl.
    Stir in potatoes, sugar, margarine, eggs, salt and 3 cups flour.
    Beat until smooth. Mix in enough remaining flour to make dough easy to handle.
    Turn out on floured surface.
    Knead until smooth and elastic, at least 5 minutes.
    Place in greased bowl and flip dough so the greased side is up.
    Cover bowl tightly.
    Refrigerate from 8 hours to 5 days.
