Southwestern Squash Casserole(Calabacitas) - cooking recipe
Ingredients

4 small zucchini, sliced
1 medium onion, sliced
1 tsp. minced garlic
1 1/2 tbsp. olive oil
1/2 c. sharp cheddar, grated
1/2 c. Monterey Jack, grated
1 1/2 c. white corn (fresh, frozen, or canned)
1/2 c. canned mild green chilies, diced
Preparation

Saute the zucchini, onion, and garlic in the oil until just soft.
Mix together all ingredients and put in an oiled casserole dish.
Bake in a pre-heated 375 degree oven.
Cook for 20-25 minutes or until top begins to brown.
Serves 4-6.
