Beets And Greens - cooking recipe

Ingredients
    2 lb. young beets (with fresh green tops)
    water to cover
    1 medium size onion, diced
    2 Tbsp. oil
    salt to taste
Preparation
    Cut tops off beets, leaving 1-inch of the stems on to prevent beet from \"bleeding\" into the cooking water. Scrub beets. Cover with water in medium size pan.
    Cover and bring to a boil.
    Turn heat down and simmer until tender, about 45 minutes.
