Ingredients

1 c. raisins
1 c. pecan halves
2 large eggs
1 1/2 c. granulated sugar
1 tsp. baking powder
1 tsp. freshly grated lemon peel
3 medium Golden Delicious apples (1 1/4 lb.)
1/3 c. bourbon or apple juice
1 3/4 c. all-purpose flour
2/3 c. vegetable oil
3/4 tsp. baking soda
2 tsp. pumpkin pie spice or 1/2 tsp. ground cinnamon, 1/4 tsp. ground nutmeg, 1/8 tsp. ginger and 1/8 tsp. allspice
Preparation

Peel, core and dice apples (3 cups).
In a small bowl, soak raisins in bourbon or juice for 30 minutes.
Heat oven to 400\u00b0. Grease and flour a 10-inch spring-form pan.
Spread 1 cup of pecans on a cookie sheet.
Bake 5 minutes or until fragrant and toasted.
Remove from oven and reduce temperature to 375\u00b0.
Chop pecans coarsely.
