Empress Xi'S Imperial International Retreat Coffee - Scotch Pot De - cooking recipe

Ingredients
    1 pkg. butterscotch pudding and pie filling mix
    1/3 c. sugar
    1 Tbsp. instant coffee
    1 1/2 c. milk or Bailey's Irish cream (optional)
    2 egg yolks, slightly beaten
    1/2 c. whipping cream
    1 shot Scotch whiskey or Southern Comfort (optional)
Preparation
    Combine the pudding mix, sugar, coffee and milk in saucepan. Cook and stir over medium heat until mixture begins to thicken. Pour a little hot mixture into egg yolks and stir quickly to blend. Add to mixture in saucepan and continue cooking until mixture comes to a full boil.
    Chill, then whip cream and fold into chilled pudding.
    Spoon into souffle cups or a serving dish.
    Chill until set, about 2 hours.
    Garnish with whipped cream and shaved chocolate.
    Serves 8 to 10.
