Trail Drive Beans - cooking recipe

Ingredients
    1 (12 oz.) pkg. dry red beans
    2 1/2 c. water
    1/3 lb. salt pork, diced
    2 lb. beef cubes
    1 c. chopped onions
    1 clove garlic, minced
    1 (6 oz.) can tomato paste
    1 tsp. chili powder
    1 tsp. cumin seed
    1/2 tsp. crushed, dried red pepper
    1 bay leaf
Preparation
    Wash beans and soak overnight in cold water; drain 2 1/2 cups water and bring to a boil.
    Turn down and simmer 1 hour.
    Render salt pork in skillet; add beef and brown.
    Drain.
    Add to beans with remaining ingredients.
    Cover and simmer for 2 hours, adding hot water as needed.
