Rosemary Potatoes - cooking recipe

Ingredients
    1 large clove garlic, minced
    1 1/2 tsp. snipped fresh rosemary
    2 Tbsp. olive oil
    1 1/2 lb. baking potatoes, peeled and cubed
    1/2 tsp. salt
    1/8 tsp. freshly ground pepper
    2 to 3 sprigs fresh rosemary (optional)
Preparation
    In a large skillet, cook and stir the garlic and rosemary in the olive oil for 1 to 2 minutes over medium heat.
    Add potatoes, salt and pepper.
    Cook for 5 minutes, stirring occasionally. Reduce the heat to medium-low and cook about 20 minutes more, turning often, until the potatoes are brown and crisp.
    Garnish with the rosemary sprigs, if desired.
    Makes 3 to 4 servings.
