Cream Of Pumpkin Soup - cooking recipe
Ingredients

2 Tbsp. butter
3 medium onions, chopped
1/2 Tbsp. flour
1 can chicken broth
1 (1 lb.) can pumpkin
2 c. milk (you may use 1%)
1 c. light cream
salt and pepper to taste
1/2 tsp. ground ginger
1/4 tsp. cinnamon
1/4 tsp. nutmeg
1 1/2 c. cooked rice
grated Parmesan cheese
Preparation

In a 6-quart pan, saute onion 10 minutes.
Stir in flour.
Add broth gradually.
Bring to a boil.
Reduce to simmer.
Cover. Cook 10 minutes.
