Chili De San Miguel - cooking recipe

Ingredients
    8 - 10 lbs. ground beef
    2 -3 lbs. ground Italian sausage
    5 large onions, chopped
    6 long green chiles, roasted, skinned
    5- 29 oz. cans peeled tomatoes, mashed
    5- 29 oz. cans crushed tomatoes
    3- 12 oz. cans Rotel original tomatoes, chopped
    5- 29 oz. cans chili beans
    10- 16 oz. cans pinto beans, jalapenos optional
    10- 16 oz. kidney beans
    2 oz. ground cumin
    3 oz. chili powder
    1 1/2 Tbsp. green tabasco
    1/4 c. salt
Preparation
    Saute onions.
    Brown meats.
    Add all ingredients to a 40 quart pot.
    Heat slowly, stirring often.
    Simmer for at least 3 hours. Do not let it scorch.
    Serve with favorite toppings (onions, cheese, crackers or Fritos).
