Eggplant Casserole - cooking recipe

Ingredients
    1/2 stick oleo
    1 c. cooked eggplant
    1 c. grated, medium cheese
    1 c. crushed saltines
    1 can cream of mushroom soup
    1 medium onion, grated
    salt and black pepper to taste
    1/2 bell pepper, chopped fine
Preparation
    Melt the oleo in a 1 1/2-quart baking dish.
    Mix rest of ingredients together and place in baking dish on top of the oleo. Top with a little grated cheese.
    Bake at 350\u00b0 for 30 minutes in a preheated oven.
