Apple Squares - Passover - cooking recipe

Ingredients
    1 c. sugar
    1/2 c. peanut oil
    1 c. matzo meal
    3 eggs, separated
    juice and grated rind of 1 lemon
    2 large apples, pared and sliced
    cinnamon-sugar mixture
Preparation
    Mix dry ingredients.
    Add yolks, oil and lemon juice and rind. Fold in stiffly beaten egg whites.
    Spread 1/2 of the batter in the pan.
    Cover with apple slices.
    Sprinkle with cinnamon-sugar mixture.
    Cover with rest of the batter.
    (Optional: You may sprinkle with more cinnamon-sugar mixture at this time.)
    Bake in a 375\u00b0 oven for 45 minutes in an 8-inch greased square pan.
    Cool and cut into squares.
