Easter Wheat Pies(Italian) - cooking recipe

Ingredients
    2 lb. uncooked wheat (whole kernel type)
    9 lb. Ricotta
    1 c. oil
    12 to 14 eggs
    1 c. Parmesan cheese
    salt and pepper to taste
    2 lb. sliced pepperoni, cut in fours
Preparation
    Clean and wash wheat; cover with water to top of large pan and cook until soft.
    Rinse in cold water and drain good.
    (Shake a few times to remove excess water.)
    In large bowl, mix wheat, Ricotta, oil, eggs, cheese, salt, pepper and pepperoni; mix well and let stand 2 to 3 hours to blend flavors.
    Taste to see if you need more salt and pepper.
