Chicken Enchiladas - cooking recipe

Ingredients
    2 c. chopped, cooked chicken (1 whole chicken or 4 chicken breasts)
    2 medium cans enchilada sauce
    2 pkg. Gordita's tortillas
    1 pt. sour cream
    1 small can diced Ortega chillies (4 oz.)
    1 medium can dark olives
    1/4 c. chopped onion
    3/4 lb. grated sharp Cheddar cheese (save 1/4 for top)
Preparation
    Mix the sour cream, chillies, olives, onion and cheese.
    Add chicken to mixture.
    Dip tortillas in enchilada sauce one by one, then put 1/4 cup mix in tortilla.
    Roll up and place in greased pan.
    Pour remaining enchilada sauce over rolled up tortillas and spread cheese over top.
    Bake at 350\u00b0 for 1/2 hour.
    Makes 8 to 10 enchiladas.
