Fried Catfish - cooking recipe

Ingredients
    1 3/4 lb. catfish fillets
    2 Tbsp. mustard (prepared)
    2/3 c. yellow cornmeal
    1/2 tsp. salt
    1/2 tsp. pepper
    1/4 tsp. ground red pepper
    shortening or cooking oil
Preparation
    Spread catfish with a thin coating of mustard.
    Combine cornmeal, salt, pepper and red pepper in a plastic bag.
    Add fish and shake to coat.
    Heat cooking oil to 375\u00b0 in a deep 12-inch skillet.
    Fry fillets, two at a time, until fish is golden brown, about 4 minutes.
    Drain on paper towels.
