Shrimp Rarebit - cooking recipe
Ingredients

6 oz. grated Colby cheese
1/3 c. mayonnaise
1/3 c. sour cream
1 tsp. lemon juice
1/2 tsp. paprika
1 1/2 lb. boiled shrimp, peeled and deveined
8 slices toast
Preparation

Melt grated cheese on low heat in a small saucepan, stirring constantly. When melted, add mayonnaise, stirring until blended. Add sour cream, lemon juice and paprika.
Blend. Remove from heat. Cut toast diagonally and arrange shrimp on toast.
Pour cheese on top and serve. Serves 4.
