Lo-Cal Cranberry Jewel Salad - cooking recipe

Ingredients
    1 c. cranberry juice cocktail
    1/2 c. unsweetened orange juice
    1 Tbsp. unflavored gelatin
    1/4 c. honey
    2 c. fresh or frozen cranberries, thawed and chopped
    1/2 c. chopped celery
    1 (10 1/4 oz.) can mandarin oranges, in water (undrained)
    vegetable cooking spray
    curly leaf lettuce leaves
    mandarin orange segments (optional)
    orange rind curl (optional)
Preparation
    Place cranberry juice cocktail and orange juice in a nonaluminum saucepan.
    Sprinkle gelatin over juice mixture.
    Let stand 1 minute.
    Add honey.
    Cook, over low heat, stirring, until gelatin and honey dissolve.
    Remove from heat.
    Stir in cranberries, celery and mandarin oranges.
    Spoon gelatin mixture into a 4-cup mold, coated with cooking spray.
    Cover and chill until firm.
    Unmold salad onto a lettuce-lined serving platter.
