Giardiniera - cooking recipe

Ingredients
    1 head cauliflower, broken into florets
    2 large carrots, peeled and thinly sliced
    1/2 cup pepper rings, drained
    1/2 red bell pepper, seeded and chopped
    1 cup white vinegar
    1 teaspoon mustard seeds
    1/2 teaspoon black peppercorns
    1/4 cup sugar
Preparation
    Combine cauliflower, carrots, pepper rings, and bell pepper in a bowl.
    In a small saucepan, add sugar, vinegar, mustard seeds, peppercorns and heat over a low heat until sugar is dissolved.
    Pour marinade over vegetables and refrigerate, stirring occasionally for at least 24 hours.
    Drain and serve. Makes 1 quart.
