Foolproof Apple Cake - cooking recipe

2 c. peeled, chopped Granny Smith apples
3/4 c. sugar
1 1/2 c. all-purpose flour
1 tsp. baking soda
1 tsp. baking powder
1 tsp. ground cinnamon
1/2 tsp. salt
1/4 c. vegetable oil
1/2 tsp. vanilla extract
1 egg white, lightly beaten
vegetable cooking spray
Preparation

Combine apples and sugar in a bowl; let stand 10 minutes. Combine flour and the next 4 ingredients in a large bowl; stir well.
Make a well in the center of mixture.
Combine oil, vanilla and egg white; stir well.
Add to dry ingredients, stirring just until moistened.
Stir in apple mixture.
Spoon batter into an 8-inch square baking pan coated with cooking spray.
Bake at 350\u00b0 for 40 minutes, or until a wooden pick inserted comes out clean. Cool completely in pan on a wire rack.
Yields 9 servings. (Serving size is a 2 1/2 x 2 1/2-inch piece.)
