Vegetable Rice Casserole - cooking recipe

Ingredients
    1 c. uncooked brown rice
    1 Tbsp. cooking oil
    1/2 c. chopped onion
    1/2 c. chopped green pepper
    2 c. sliced zucchini squares
    3 small tomatoes, cut in eighths
    1 tsp. salt
    1 clove garlic, crushed
    2 1/2 c. boiling chicken broth
Preparation
    Saute rice in oil, over low heat, until golden brown (5 to 10 minutes).
    Spread rice in a greased 2 1/2-quart casserole dish. Layer onion, green pepper, zucchini and tomatoes over rice.
    Add salt and garlic to broth, then pour over vegetables.
    Cover and bake at 350\u00b0 for 1 hour and 15 minutes, or until liquid is absorbed and vegetables are tender.
    Makes 6 to 8 servings.
