Chicken Tarragon - cooking recipe

Ingredients
    2 frying chickens, cut up
    1 Tbsp. oil
    1 can boiled onions
    1/2 c. dry vermouth or Sauterne
    2 sprigs chopped parsley
    1 minced garlic clove
    1 tsp. dried tarragon
    1 tsp. salt
    1/8 tsp. pepper
    1/2 c. water
    1 Tbsp. lemon juice
    1 lemon, sliced
Preparation
    Brown cut up fryers in 1 tablespoon oil. Drain and blot dry. Add onions, vermouth, parsley, garlic clove, tarragon, salt, pepper and water. Cover. Simmer on top of stove or bake, covered, in a 325\u00b0 oven for about 45 minutes. Stir lemon juice into sauce and simmer, uncovered, until reduced to sauce consistency. Garnish top of each piece of chicken with thin slices of lemon. Serves 6.
