Micro Potatoes Parmesan - cooking recipe

Ingredients
    2 Tbsp. butter or margarine
    2 medium unpeeled potatoes, sliced 1/4-inch thick
    1/2 c. onion
    1 clove garlic
    1/2 c. green pepper chunks, cut 1-inch strips
    1/4 tsp. salt
    1/4 c. Parmesan cheese
    paprika
    parsley, chopped
Preparation
    Melt butter in shallow 9-inch dish in microwave oven.
    Add potatoes, onion and garlic; toss.
    Cover loosely with plastic wrap; place in microwave oven on full power 5 minutes.
    Stir in green pepper and salt; toss.
    Cover and microwave on full power 3 minutes.
    Gently mix in cheese.
    Toss gently and dust with paprika; microwave on full power, uncovered, 3 minutes.
    Let rest 2 minutes.
    Sprinkle on parsley.
    Serves 2 to 3.
