Stuffed Artichokes - cooking recipe
Ingredients

4 artichokes
1 c. bread crumbs
1 garlic clove, chopped
2 anchovy fillets, chopped
1 tsp. parsley
3 Tbsp. grated Romano cheese
salt and pepper to taste
1/4 c. olive oil
1 c. cold water
Preparation

Wash and remove large outer leaves around artichokes. Cut off stems with scissors and trim points 1 1/2-inches down from the top. Spread leaves apart. Combine crumbs, garlic, anchovies, parsley, cheese, salt, pepper and oil and mix thoroughly. Place crumbs mixture between loosened artichoke leaves. Stand straight up in saucepan and pour water into pan from side. Cover and simmer for about 30 minutes. Leaves should pull off easily. Remove artichokes very carefully. Serve hot or cold.
