    1 broiler-fryer chicken, cut in pieces or 4 whole chicken breasts, cut apart and skinned
    1/4 c. olive oil
    4 ribs celery, chopped
    2 medium onions, chopped
    6 sprigs parsley
    1 Tbsp. chopped fresh tarragon or 1 tsp. dried
    1/2 c. vermouth
    2 1/2 tsp. salt
    1/4 tsp. freshly ground black pepper
    40 cloves garlic (unpeeled) or 20 if not so brave!*
