Dessert Cheese Centerpiece - cooking recipe

Ingredients
    2 c. cream style cottage cheese
    3 oz. cream cheese, softened
    1/2 c. (2 oz.) Blue cheese, crumbled
    1 c. whipping cream
    assorted crackers
    apple wedges, sliced
    fresh pears
Preparation
    Beat together cottage cheese, cream cheese and Blue cheese until they are smooth and creamy.
    Gradually beat in whipping cream, beating until thickened.
    Stand colander in a bowl and line with several thicknesses of cheesecloth.
    Pour in cheese mixture. Tie cheesecloth at top.
    Let drain overnight in refrigerator. Untie cloth and turn ball out onto a plate.
    Remove cloth. Decorate top of cheese with lemon or mint leaves.
    Surround cheese with assorted crackers, apples and pears.
    Brush fruit lightly with lemon juice or ascorbic acid color keeper to keep from turning brown.
    Yields 6 to 8 servings.
