Eggplant Casserole - cooking recipe

Ingredients
    1 large eggplant
    1 onion, diced
    1 clove garlic, crushed
    1 green pepper, diced
    2 Tbsp. bacon grease
    3 slices toasted bread, crumbled
    1 egg
    1/2 c. Pet milk
    2 Tbsp. butter
    Ritz crackers, crumbled
Preparation
    Boil eggplant in salted water, drain and mash.
    Saute onion, garlic and pepper in bacon grease.
    Add eggplant and cook 5 minutes.
    Stir in bread crumbs, egg, milk, butter, salt and pepper (to taste).
    Pour into casserole dish, sprinkle top with cracker crumbs and dot with butter.
    Bake at 375\u00b0 for 30 to 40 minutes.
