Zucchini Casserole - cooking recipe

Ingredients
    6 c. sliced zucchini
    1/4 c. chopped onion
    1 can cream of chicken soup
    1 c. light sour cream
    1 c. shredded carrots
    1 (8 oz.) pkg. herb stuffing mix
    1/2 c. oleo
Preparation
    Cook zucchini and onion in boiling water for 5 minutes. Combine sour cream and soup. Stir in carrots, onion and zucchini. Combine stuffing and oleo. Spread half of it in the bottom of a 7 x
    11-inch baking dish. Spoon vegetables on top.
    Place remaining stuffing on top of vegetables.
    Bake at 350\u00b0 for 30 minutes. Serves 8.
