Country Style Pasta With Ricotta - cooking recipe

Ingredients
    2 thick slices bacon, coarsely chopped
    1/4 c. extra virgin olive oil
    1 medium onion, chopped
    1 lb. part-skim Ricotta cheese
    1/4 c. coarsely chopped flat leaf parsley
    1/4 c. coarsely chopped fresh basil
    1 Tbsp. finely chopped scallion green
    1 1/3 c. freshly grated Parmesan cheese
    1/2 tsp. salt
    1/2 tsp. freshly ground pepper
    1 lb. penne rigati
Preparation
    In a large heavy skillet, cook the bacon over moderate heat, stirring occasionally until it is lightly browned and the fat is rendered, about 5 minutes.
    Add the oil and onion.
    Reduce the heat to low and cook until onion is softened and translucent, about 8 minutes.
    Remove from heat and set aside.
