Southern Raised Biscuits - cooking recipe

Ingredients
    1 pkg. active dry yeast
    1 1/2 c. very warm water (105~ to 115~)
    4 1/2 c. unsifted all-purpose flour
    2 Tbsp. salt
    1 Tbsp. sugar
    about 2/3 c. butter or margarine
    1 egg yolk
Preparation
    Sprinkle yeast over water.
    Let stand for a few minutes, then stir.
    Sift dry ingredients into large bowl.
    Cut in 1/2 cup soft butter.
    Add yeast and mix well.
    Roll 1/2-inch thick on floured board.
    Cut with 2-inch biscuit cutter and place on cookie sheet. Brush with melted butter.
    Beat egg yolk and 1 tablespoon water together.
    Brush on biscuits.
    Cover and let rise until doubled, about 1 hour.
    Bake in preheated hot oven (425\u00b0) about 10 minutes. Makes about 3 dozen biscuits.
