Eggplant Italiano - cooking recipe

Ingredients
    1 medium-size eggplant, pared and cut into 1/4 to 1/2-inch slices
    1 medium onion, sliced thin
    1 tsp. parsley flakes
    1 large jar garden-style spaghetti sauce
    1 c. Italian-style breadcrumbs
    1 (8 oz.) pkg. Mozzarella cheese, shredded
Preparation
    Lightly grease bottom of 8 x 12 x 2-inch baking dish.
    Cover bottom with thin layer of spaghetti sauce.
    Layer eggplant, 1/2 teaspoon parsley flakes, onion, 1/2 of spaghetti sauce, 1/2 of Italian bread crumbs and 1/2 of cheese.
    Repeat, ending with cheese.
    Bake 30 to 40 minutes at 350\u00b0.
