Salmon Loaf With Green Pea Sauce - cooking recipe

Ingredients
    2 Tbsp. unsalted margarine
    1 small yellow onion, chopped
    1 medium stalk celery, chopped
    3 Tbsp. flour
    1/2 c. skim milk
    2 (6 1/2 oz.) cans salmon, drained and flaked
    1/4 c. fine dry bread crumbs
    1 large egg white, slightly beaten
    2 tsp. dill weed
    4 tsp. lemon juice
    1/4 tsp. black pepper
    1 c. low-sodium chicken broth
    1/2 c. cooked green peas
Preparation
    Melt 1 tablespoon of margarine. Add onion and celery and cook until soft, 5 minutes.
    Blend 1 tablespoon of flour; add milk and cook 3 to 5 minutes, until thickened.
    Remove from heat.
    Stir in salmon, bread crumbs, egg white, 1 teaspoon dill, 2 teaspoons of lemon juice and 1/8 teaspoon black pepper.
    Turn all in a greased 7 1/2 x 3 1/2 x 2-inch loaf pan.
    Bake, uncovered, at 350\u00b0 for 40 to 45 minutes.
    Cool for 15 minutes.
