Vegetarian Chopped Liver - cooking recipe

Ingredients
    1 medium size eggplant (about 3/4 lb. 340 g)
    olive oil cooking spray
    2 medium size onions (about 1/2 lb. 225 g), chopped
    1 garlic clove, chopped
    2 hard-cooked egg whites
    1/2 tsp. (2.5 ml) salt (optional)
    freshly ground pepper to taste
    white wine vinegar to taste
Preparation
    Preheat broiler.
    Peel and slice eggplant 1/2-inch (1.5 cm) thick.
    Place eggplant on a nonstick baking sheet and broil on both sides until tender, about 10 minutes on each side.
    Coarsely chop and set aside.
