Diabetic Oat Pancakes - cooking recipe

Ingredients
    1 c. quick cooking oats
    2 Tbsp. sugar
    1 tsp. salt
    1 1/2 c. skim milk
    1 tsp. lemon juice
    1 c. all-purpose flour
    2 tsp. baking powder
    2 eggs, slightly beaten
    1/4 c. vegetable oil
Preparation
    Combine oats, flour, sugar, baking powder and salt in mixing bowl.
    Make a well in the center.
    Combine egg, milk, oil and lemon juice.
    Pour into well and stir just until moistened.
    Pour batter by 1/4 capfuls onto a lightly greased, hot griddle.
    Turn when bubbles form on top.
    Cook until second side is brown.
    Makes 6 servings.
