Spanish Rice - cooking recipe

Ingredients
    1 c. uncooked rice
    2 Tbsp. oil
    1 Tbsp. diced onions
    1 (16 oz.) can tomatoes or Ro-Tel tomatoes
    2 1/2 c. water
    salt and pepper
Preparation
    Brown rice in oil. Add onion, tomatoes, salt, pepper and water. Cook over low heat until rice absorbs water and it is dry but not burned.
