Ham And Sweet Potatoes In Sauce - cooking recipe
Ingredients

3 Tbsp. vegetable oil
8 oz. frozen small white onions
1 lb. baked ham
3 c. chicken stock
1 Tbsp. mandarin peel, chopped
salt and pepper to taste
1 Tbsp. margarine
1 lb. sweet potatoes, peeled
3 Tbsp. all-purpose flour
1 c. mandarin juice
2 c. broccoli florets
Preparation

Chop ham and potatoes into 1-inch cubes.
Heat the oil and butter in Dutch oven.
Add sweet potatoes and saute until lightly brown, add thawed onions, saute for 2 minutes.
Remove potatoes and onions from the pan, mix flour with drippings, whisking constantly for 2 minutes.
Gradually add the mandarin juice, chopped mandarin peel, and stock.
Cook this mixture until thickened, add potatoes, onions, broccoli and ham.
Cook for 10 to 15 minutes until the vegetables are tender and the ham is heated through.
Serves 4 to 6.
