Cheese Stuffed Strawberries - cooking recipe

Ingredients
    1/2 c. low-fat Ricotta cheese
    1 tsp. grated lemon peel
    1 tsp. fresh lemon juice
    1 tsp. honey
    48 large berries
    48 small mint sprigs
Preparation
    Mix all ingredients except berries and mint in blender or food processor until fluffy.
    Refrigerate and chill for 1 hour.
    Scoop out centers of berries.
    Fill with cheese mixture.
    Garnish each berry with mint sprig.
