Wisconsin Cheddar Cheese Soup - cooking recipe
Ingredients

6 Tbsp. butter or margarine
1/2 c. finely chopped celery
1/2 c. grated carrot
1/2 c. finely chopped onion
1/2 c. flour
2 1/2 c. chicken broth
1 1/2 c. grated Cheddar cheese
1 c. milk
1 c. half and half or use all milk
1/2 tsp. dry mustard
1/4 tsp. salt
1/2 tsp. red pepper
1 to 2 Tbsp. chopped, fresh parsley
8 slices bacon, diced and fried
Preparation

Melt butter in a large saucepan; saute celery, carrot and onion until tender.
Add flour and blend well.
Add chicken broth and cook until thickened.
Add cheese; stir until melted.
Stir in half and half and milk (for thicker soup, reduce half and half by 1/2 cup).
Add seasonings and bacon.
Heat, but do not boil, and serve.
Serves 4 to 6.
