Carrot Cake With Cream Cheese Icing - cooking recipe
Ingredients

1 1/2 c. cooking oil
2 c. sugar
5 eggs
2 1/4 c. flour
2 tsp. baking powder
1 tsp. soda
2 tsp. cinnamon
1 tsp. salt
1 1/2 tsp. vanilla
2 c. grated carrots
1 c. unsweetened crushed pineapple
1/2 c. chopped nuts (optional)
Preparation

Beat oil and sugar in large mixing bowl.
Beat in eggs one at a time; beat well after each addition.
Sift together dry ingredients and add with vanilla, carrots, pineapple and nuts to the sugar mixture.
