3 Bean Soup - cooking recipe

Ingredients
    2 c. dried navy beans
    1 c. dried red beans
    1 1/2 c. dried garbanzo beans
    2 qt. chicken broth
    1 or 2 chopped onions
    1 c. sliced carrots
    1 c. sliced celery
    2 Tbsp. parsley flakes
    2 tsp. dried basil
    1 tsp. dried oregano
    1 tsp. salt
    1/2 tsp. pepper
    3 c. chopped fresh spinach (4 oz. approximately)
    grated Parmesan (optional)
Preparation
    Sort and wash beans.
    Place in large pot and cover with water. Soak 8 hours.
    Drain and return beans to pot.
    Add all ingredients but spinach and cheese.
    Bring to a boil and simmer covered about 2 hours or until beans are tender.
    Add spinach; cook 10 to 15 minutes.
    Sprinkle servings with Parmesan.
    Yield: approximately 3 quarts.
    Very hearty and healthy!
    Freezes well.
