Cranberry Poppy Seed Loaf - cooking recipe
Ingredients

2 1/2 c. flour
3/4 c. sugar
2 Tbsp. poppy seed
1 Tbsp. baking powder
1 c. skim milk
1/3 c. margarine
1 egg
1 tsp. vanilla extract
2 tsp. grated lemon peel
1 c. fresh or frozen cranberries, chopped
confectioners sugar glaze (optional)
Preparation

In a large bowl, mix flour, sugar, poppy seed and baking powder; set aside.
Blend milk, margarine, egg, vanilla and lemon peel; stir into flour mixture just until moistened.
Stir in cranberries; spread in a greased loaf pan.
Bake at 350\u00b0 for 60 to 70 minutes or until done.
Cool.
Drizzle with glaze, if desired. Yield: 1 loaf.
