Doctor Bird Cake - cooking recipe

Ingredients
    3 c. flour
    1 tsp. baking soda
    1 tsp. cinnamon
    2 c. sugar
    1 tsp. salt
    1 tsp. vanilla
    2 c. diced ripe banana
    1 c. (8 oz.) crushed pineapple
    3 eggs
    1 c. oil
Preparation
    Sift flour, baking soda, salt, cinnamon and sugar.
    Add banana, oil, pineapple and juice, vanilla and eggs to dry ingredients; stir to blend mixture (do not beat).
    Pour into greased angel food pan and bake at 350\u00b0 for 1 hour and 15 minutes. Set aside to cool on rack without removing from pan.
    Serve plain, with whipped cream, ice cream or favorite topping.
