Wild Duck And Oyster Gumbo - cooking recipe

Ingredients
    2 wild ducks, cut up
    1 c. oil
    1 c. flour
    1 large onion, chopped
    2 Tbsp. pepper sauce
    red pepper to taste
    black pepper to taste
    parsley, minced
    green onion tops, minced
    2 qt. warm water
    1 pt. oysters
Preparation
    Make a roux by heating oil and adding flour.
    Blend well and cook until very brown, stirring constantly so it will not scorch. Add onions and cook until tender.
    Season duck well.
    Fry duck in roux until oil comes out around the edges.
    Add warm water and cook slowly for about 2 hours, until duck is tender.
    Add oysters about 20 minutes before serving.
    Sprinkle with parsley and onions about the same time.
    Serve over rice.
