Rhubarb Muffins - cooking recipe
Ingredients

1 1/2 c. brown sugar
1/2 c. cooking oil
1 egg
2 tsp. vanilla
1 c. buttermilk
1 1/2 c. rhubarb, chopped
1/2 c. walnuts
2 1/2 c. flour
1 tsp. baking soda
1 tsp. baking powder
1/2 tsp. salt
Preparation

Combine brown sugar, oil, egg, vanilla and buttermilk.
Mix well.
Stir in rhubarb, nuts and vanilla.
Sift dry ingredients and add to rhubarb mixture.
Spoon batter into greased muffin tins.
