Red Beans And Rice - cooking recipe
Ingredients

1 lb. red (kidney) beans
6 c. cold water
4 Tbsp. olive oil
1 lb. turkey kielbasa, chopped
1 large white or yellow onion, chopped
1 green or red bell pepper, chopped
2 cloves garlic, chopped
salt and pepper to taste
Preparation

Wash beans in cold water, drain and add 6 cups of cold water. Bring to a boil slowly.
In a hot skillet, combine 4 tablespoons olive oil, onion, bell pepper, garlic, salt and pepper.
Cook until tender.
Add kielbasa and brown.
Add skillet mixture to beans and cook over low heat until beans are tender, 1 to 1 1/2 hours. Serves 6 with rice.
