Pork Chops And Rice Dinner - cooking recipe

Ingredients
    4 lean pork chops
    1/4 tsp. vegetable cooking spray
    1/4 c. diced onion
    1/4 c. diced green pepper
    1/2 c. uncooked regular rice
    1 (28 oz.) can whole tomatoes, chopped (undrained)
    1/4 c. water
    1/2 tsp. salt
    pepper
    1/2 tsp. prepared mustard
Preparation
    Trim fat off chops and pepper.
    Coat skillet with cooking spray.
    Over medium heat, add chops and cook until brown on both sides.
    Remove chops and drain on paper towel.
    Wipe pan drippings from skillet.
    Coat skillet with additional cooking spray.
    Add onion and green pepper and saute until tender.
    Stir in rice, tomatoes, water, salt and mustard, then add pork chops.
    Bring to a boil, cover, reduce heat and simmer 25 to 30 minutes or until rice is tender.
