Southern Style Black-Eyed Peas - cooking recipe

Ingredients
    2 c. (1 pkg.) black-eyed peas
    1 c. uncooked rice
    1/2 tsp. pepper
    1 small ham hock
    8 c. cold water
    salt to taste
Preparation
    Place ham hock in water; bring to boil.
    Reduce heat and simmer 45 minutes.
    Add peas to ham.
    Continue simmering 1 1/2 hours; add rice and simmer 45 minutes or until rice and peas are done and liquid is almost absorbed.
    Remove meat from bone; serve peas and rice on platter.
    Place ham on top.
