My Mother'S Fried Chicken - cooking recipe

Ingredients
    1 frying chicken, cut up
    flour
    shortening
    water
    salt
    pepper
Preparation
    Soak chicken pieces in cold water for several hours to remove blood.
    Drain.
    Place flour in plastic bag for coating chicken. Heat vegetable shortening in an iron skillet, hot enough so chicken will start frying the minute you add it to the fat.
    Fry until brown on both sides.
    When brown, season with salt and pepper. Cover and cook slowly until tender.
    Remove lid and fry until crisp on both sides.
    Remove chicken to heated serving platter.
